Ingredients
For Manchurian balls
Carrots, cabbage, capsicum 2 cups very finely chopped
Spring onion ½ cup
Maida 3 tablespoons
Corn flour 3 tablespoons
Black pepper powder ½ teaspoon
Water 3 tablespoons
Salt to taste
For the sauce
Spring onion ½ cup
Crushed ginger 1 teaspoon
Green chilly 2 finely chopped
Soya sauce 3 teaspoons
Black pepper powder ½ teaspoon
Sugar 1 teaspoon
Salt to taste
Corn flour 2 teaspoons
Method
Chop the vegetables very finely. Take maida, corn flour, salt and black pepper powder in a bowl. Add the chopped vegetables and mix well.
Sprinkle as little water as needed to make balls. You can gradually add more water if needed, but not more than 3 tablespoons of water. Mix well and make 12-15 equal sized balls.
Heat the oil and deep fry the shaped balls 3 at a time in medium flame. Be sure to fry them well to ensure the inside is cooked thoroughly. Drain the excess oil and set aside.
Heat 3 teaspoons oil in a pan and add the crushed ginger, chopped green chilies and sauté for 2 minutes. Add the chopped spring onion whites and sauté for 3-4 minutes.
Add soya sauce, salt, sugar and pepper powder. Mix well and cook for 2 minutes. Add 1 cup water and cook till the sauce starts to boil.
Mix corn flour in ¼ cup water and add to the boiling sauce. Simmer for 4 minutes till the sauce thickens a bit.
Add the fried Manchurian balls and mix very gently. Cook for 3-4 minutes in low flame.
Add the finely chopped spring onions and garnish. Remove from flame and serve Veg Manchurian gravy hot with fried rice.
