Rajasthani cuisine is incomplete without the mention of the famous Dal-Baati-Churma.  

 

No Rajasthani celebration or wedding menu is complete without this popular recipe.

 

Dynamite News brings you the recipe of Dal Baati Churma: 

 

Ingredients


For the dal


Chana dal                                     ¼ cup
Arhar dal                                        ¼ cup
Moong dal                                        ¼ cup
Urad dal                                              ¼ cup
Chilli powder                                       1 tea spoon
Haldi                                                      ½ teaspoon
Dhania powder                                    ½ teaspoon
Garam masala                                       ½ teaspoon
Tejpatta                                                    2
Jeera                                                          ½ teaspoon
Chopped green chillies, ginger, garlic ¼ cup 
A pinch of Hing
Lemon juice                                              ¼ teaspoon
Ghee                                                          3 tablespoon
Salt to taste
Tomato                                                      2-3
Onion                                                         2
Coriander leaves to garnish 


For the baatis 


Atta                                              1 cup
Suji                                               1 cup
Curd                                            ½ cup
Ghee                                          1 ½ cup
Soda                                          ¼ teaspoon
Salt to taste
Ajwain                                      1 teaspoon  

 

Method


For the dal
Clean and wash all the dals and add 4 cups of water. Cook the dals with salt and haldi.

 

Heat the ghee in a pan and add the bay leaves, jeera , hing green,  chillies, ginger and garlic. When they crackle, add onion, tomato. Now add all the rest of spices and cook it for a while.


Adjust the consistency of the Dal before serving and if required, add some water.


Now garnish it with green coriander leaves.  


For the baatis
Mix all the ingredients and knead into firm dough, knead well.


Divide the dough into equal portions and shape each portion into an even sized round. 


Heat a gas tandoor and put the baatis on the grill of the tandoor. Cook them on a medium flame for 20 to 25 minutes. Cooking the baatis over a medium flame will ensure that the baatis are cooked from inside also.


For Churma 
Crush the baatis in a mixer grinder and add sugar, mawa and ghee in the crushed baatis. The churma is ready. 

 

Dip the baatis in ghee and sever it hot with dal and churma.
